Talking Turkey Leftover Recipes for Pinoy Food Lovers

PACIFICA, Calif. - Turkey is the star of any thanksgiving meal. But its not a usual favorite among Filipinos.
Chefs at the Juan de la Cruz Asian Cuisine (JAC), the only Filipino restaurant in Pacifica, California said, it lacks the taste Pinoys crave.

We are used to the big and bold flavors associated with Philippine cuisine. The turkey is too bland for our palate, said Donna So, JAC administrative chef.

Head Chef Leo Trinidad said, Dont let a good turkey go to waster after that Thanksgiving meal.

To bring turkey back to life the Pinoy way cook it ala Lechon Paksiw!

Heres how to make Turkey Paksiw:
Saute chopped onions and garlic.
Add vinegar, liver pate, pork stock, salt, pepper and sugar for flavor.
Add bay leaves for aroma.
Simmer for 10 minutes and serve.

Adolfo Grona, one of JACs clients tasted the Turkey Paksiw. His verdict Its good! It tastes just like lechon paksiw. It has that texture.

Not just tasty, Turkey Paksiw lasts long too. Trinidad said, The vinegar and sugar preserves it. So it can be stored and still taste good through time.

For leftover turkey breast, cook it ala Lumpia Shanghai!

Heres how to make Turkey Lumpia:
Chop turkey meat finely and mix with chopped red onions, scallions, carrots and garlic.
Flavor with salt and pepper.
Peel fresh shrimps, slice in half.
Put shrimp over a lumpia wrapper, add turkey filling.
Roll wrapper and seal using egg whites.
Deep fry until golden brown.

Trinidad said, We added shrimp to give twist to the traditional lumpia. Shrimp adds flavor to turkey.

Maja Guerrero, another customer at JACs, tasted the Turkey Lumpia. Her verdict I have always liked Lumpia Shanghai. This is something new. But its very good.

Chefs at JAC said leftover turkey should just be treated like any meat that complements Filipino cooking. The key is combining it with ingredients used for popular Filipino dishes a satisfying and money-saving way to celebrate the holidays.
